注重飲食健康有營已是潮流大勢所趨,3月20日,BC Greenhouse Growers’
Association 推出 BC Veggie Day 活動; 3月12日,BC Produce Marketing Association 及 BC Chefs’ Association 亦合辦了一個別開生面的第十五屆 Healthy Chef Competition。
今屆參賽者共有八組,有學生成員如 The International Culinary Schools、VCC、Burnaby Central Secondary School,也有酒店或高球會大廚等同場較勁。有趣點子是入場眾人都是評判,除了由卑詩廚師協會派出五名大廚組成評判團外,與會者的晚餐正是享用各組別炮製的主菜及甜品,然後給予評分,選出 People’s Choice Award。
當晚先由 Hyatt Hotel 供應頭盤 Salmon Carpaccio 配薯泥及脆蔥絲來掀開序幕。之後,參賽隊伍出品如下﹕
主菜 : Lamb with Sprouted Lentils and Roasted Butternut Squash
甜品 : Poached Apple “Mille-Feuille”, Chocolate-avocado Pudding and Hazelnut Cake, Elderflower Sorbet
主菜 : Coho Salmon
甜品 : Mango and Passion Fruit Mousse Cake
主菜 : Maui Cattle Company Kalbi Braised Beef and Pineapple Salsa
甜品 : Waialua Estates Bakes Chocolate Custard, Saki Lychee Kanten, Coconut Panna Cotta
主菜 : Chicken 3 ways
甜品 : Light Mango Cheesecake with Lemon Thyme Sorbet
主菜 : Braised Beef Short Rib
甜品 : Blueberry and Goat Cheese Cake
主菜 : Rack of Lamb
甜品 : Fruit Short Cake with Chocolate Mousse
主菜 : Gelderman Farms Pork Two Ways
甜品 : BC Apple Ravioli with a “Beurre Blanc”
主菜 : Leek Ash Tenderloin
甜品 : Carrot Cake with Vanilla Ice Cream
一輪試食分享之後,得獎名單亦於晚會完結前揭曉,得到 Best Dessert Award 的是 Hyatt Regency Hotel Vancouver、Best Entree Award 是 Delta Hotels、Healthy Plate Award 及 $1,000現金獎是 VCC、Best Table Showcase Award 是 Beach Grove,而得到全場人士投票的 People’s Choice Award 是 Burnaby Secondary School,誠是後生可畏,前途無量。
